Variations of arroz doce exist in the world, from Portuguese to France to Europe, China, Portugal, India, and Norway, among others. The recipe is a simple dessert you can cook with rice and variations of creamies like milk, coconut milk, goat milk, almond milk, or vanilla.
We want to look at how to prepare São Tomé and Príncipe arroz doce with some of the ingredients above and a pinch of cinnamon. This recipe shares similarities with the Portuguese way.

Sao Tomé and Príncipe, located on the Equator in the Gulf of Guinea, is an island country in Central Africa. This island group consists of two main islands, Sao Tomé, and Principe, and several rocky islets, such as Rôlas on Sao Tomé and Caroço, Pedras, and Tinhosas on Principe.

How to Prepare Arroz Doce of Sao Tome & Principe
Ingredients
- 1 cup rice
- 1 liter of milk
- 1 cinnamon stick
- 2 cups hot water
- 1 bowl of sour cream
- 1 glass of coconut milk
- 2 tbsp. of cinnamon powder
- 1 bottle of condensed milk
Instructions
- Pour one cup of rice into a cooking pot
- Add one liter of water
- Stir the mixture, cover halfway, and allow to boil
- Check after 15 minutes. You’ll notice the rice has absorbed the water.
- Add the liters of fresh milk to the pot and stir
- Add the glass of coconut milk
- Add the bowl of sour cream
- Add the bowl of condensed milk
- Stir, cover the pot halfway, and allow to boil for 20 minutes
- Stir and serve in a dessert glass or breakfast bowl.
- Sprinkle powdered cinnamon to taste
- You can also add the cinnamon stick in the middle of the arroz doce.
