Poulet moambe is a national dish of the Central African Republic of the Congo and the Democratic Republic of the Congo. You’ll need chicken, peanut butter, onions, garlic, ginger, hot pepper, palm oil, and spices to prepare poulet moambe. 

While many countries claim the origin of this delicious chicken meal, including Gabon and Angola, the recipe is widely prepared in Belgium.

How to Prepare Poulet Moambe in 12 Steps

Ingredients

  • 1 tbsp. of salt
  •  ½ cup of water 
  • 2 Maggi cubes
  • 2 kilos of chicken
  • ½ cup of palm oil
  • 2” of ginger, minced
  • 2 big onions, minced
  • 3 tbsp. of peanut butter
  • 3 cloves of garlic, minced
  • 2 tbsp of powdered smoked paprika
  • 2 tbsp. of powdered cayenne pepper
  • 3 tomatoes, minced Or, tomato paste

Instructions

  1. Wash the chicken and set aside
  2. Pour the palm oil into a non-stick cooking pot and brown the chicken
  3. Take the chicken out of the oil
  4. Saute the onion for 3 minutes
  5. Add the garlic and ginger. Add the smoked paprika, cayenne pepper, and Maggi cubes
  6. Add your tomatoes or tomato paste. 
  7. Add the chicken, salt to taste and stir
  8. Simmer the poulet moambe for 20 minutes on low heat
  9. Take out the chicken and add the peanut butter, mixing evenly in the sauce
  10. Add a ½ cup of water to the sauce and stir slowly
  11.  Add the chicken back to the pot and simmer for 10 minutes on low heat
  12. Serve with any rice, boiled yam, spaghetti, potatoes, or boiled plantains.

Tips for Cooking Paulet Moambe

  1. You can add hot pepper like habanero scotch bonnet for a spicy feel
  2. Grill the chicken if you prefer to reduce oil usage
  3. Although you can use any part of a chicken, use the drumsticks if possible, as they add flavor to the recipe.
  4. Use original palm oil for this recipe to get the right taste. If unavailable, you can opt for olive oil.
