What is Loubia?
Loubia refers to legumes associated with white bean stew, including rich tomato sauce. Inhabitants of North Africa eat loubia. You can prepare the recipe with or without meat.
If you choose meat, go for beef, lamb, or chicken. Usually, all you need are a few vegetables in addition to the spices and white beans, or Cannellini beans, also known as white kidney beans.

How to Make Loubia
Ingredients
- Olive oil
- Salt to taste
- 2 hot chillies
- 1/4 tsp cumin
- 1 Bouillon cube
- 3 fresh tomatoes
- 1 tbsp ground paprika
- 2 tbsp. of tomato paste
- 1/4 tsp ground turmeric
- 2 cloves of garlic, minced
- 1/2 small preserved lemon
- 1 medium onion, chopped
- ¼ cup cilantro, parsley, chopped
- 2 cups of White beans, cooked or canned
- ½ cup of Water or vegetable broth, optional

Instructions
- If you choose to use fresh beans, you’ll have to soak and cook them for 5–6 hours on low heat. Then set aside.
- Cut your preserved lemon, then separate the pulp from the skin. Finely mince the pulp and cut the skin into strips.
- Pour the oil into a saucepan and put on the stove.
- Saute the onion in the hot olive oil until softened, then add the garlic.
- Stir for a few minutes, then add the tomato paste.
- Stir-fry for five minutes, then add the fresh tomatoes
- Allow the sauce to simmer for 10 minutes, then add the spices, pepper, chopped preserved lemon and salt to taste
- Add the cooked or canned beans, and simmer for another 10 minutes.
- Add bouillon cube, stir, taste and adjust salt or thickness with a little water or broth if it’s too thick.
- Enjoy hot, with fresh bread or boiled rice.
