Skilpadjies is an Afrikaans dish whose name is derived from the word “skilpad”, meaning tortoise. This name is attributed to the fact that the shape of the meat resembles a tortoise. The delicacy is made of lamb or sheep liver, mixed with spices, herbs and minced onions. Regarding its history, skilpadjes are believed to have been created by the Voortrekkers. They preserved their meat by using salt and spices to cure it. So, here is how to prepare Skilpadjies.
How to Prepare Skilpadjies
Ingredients
- 1 teaspoon of salt
- Toothpicks or skewers
- 2 cloves of minced garlic
- 1 teaspoon of ground coriander
- 1 teaspoon of ground black pepper
- 1 large, finely chopped onion
- 1 tablespoon of finely chopped fresh parsley
- 200g of caul fat
- 500g lamb or sheep liver

Instruction
- Place the liver in cold water for 15 to 20 minutes to remove excess blood and enhance its taste.
- Remove the liver from the water and place it on a paper towel.
- Over medium heat, melt the butter or oil. Sauté the pepper, paprika, onion, garlic, salt, and cumin and let them cook for 5 to 7 minutes.
- When everything is cooked, remove the pan from the heat and let it cool down.
- Add the chopped liver to the ingredients and mix them properly.
- Using a toothpick, wrap bacon around each chopped liver and pin it with a toothpick.
- Sauté the pieces over a flame for about 4 to 6 minutes until the bacon becomes crispy.
- Serve the skilpadjies with rice, curry, salad, or a sandwich.
