- 1 teaspoon of salt
- Toothpicks or skewers
- 2 cloves of minced garlic
- 1 teaspoon of ground coriander
- 1 teaspoon of ground black pepper
- 1 large finely chopped onion
- 1 tablespoon of finely chopped fresh parsley
- 200 g of caul fat
- 500 g lamb or sheep liver
Place the liver in cold water for 15 to 20 minutes to remove excess blood and enhance its taste.
Remove the liver from water and place them on a paper towel.
Over medium heat, melt the butter or oil. Sautee the pepper, paprike, onion, garlic, salt, and cumin and let them cook for 5 to 7 minutes.
When everything is cooked, remove the pan from the heat and let it cool down.
Add the chopped liver into the ingredients and mix it properly.
Using a toothpick, wrap bacon around each chopped liver and pin it with a toothpick.
Sautee the pieces onto a flame for about 4 to 6 minutes until the bacon becomes crispy.
Serve the skilpadjies with rice, curry, salad, or sandwich.
