The mauby drink is a classic Caribbean drink made from the bark of the mauby tree. If you want to make it, here’s a guide on how to make a mauby drink.

How to Make Mauby Drink (Trinidad & Tobago)

Ingredients

  • 3-star anise
  • 1 large bay leaf
  • 1 tsp whole cloves
  • 2 pieces of mace
  • 8 cups of water
  • 2 tsp aniseed
  • 1 cup brown sugar (or to taste)
  • 1 piece of dalchini cinnamon (two inches)
  • 3 pieces of mauby bark
  • 1 piece of cassia cinnamon (one inch)

Instructions

  1. In a large saucepan, put the spices: the cinnamon sticks, mauby bark, cloves, aniseed, water and the orange peel.
  2. On low to medium heat, let the pot boil for 15 minutes.
  3. Remove the saucepan from the stove, cover, and leave it to rest overnight.
  4. The following day, strain the concentrated mauby into a jug or bottle.
  5. Pour one cup of concentrated mauby into another jug or pitcher, and add water into the jug (start with 8 cups and adjust, adding more water if needed. At the same time, sweeten until you strike a balance in taste that works for you.
