Ingredients
  

  • 3 star anise
  • 1 large bay leaf
  • 1 tsp whole clove
  • 2 pieces of mace
  • 8 cups water
  • 2 tsp aniseed
  • 1 cup brown sugar or to taste
  • 1 piece of dalchini cinnamon two inch
  • 3 pieces of mauby bark
  • 1 piece of cassia cinnamon one inch

Instructions
 

  • In a large saucepan, put the spices: the cinnamon sticks, mauby bark, cloves, aniseed, water and the orange peel.
  • On low to medium heat, let the pot to a boil for 15 minutes.
  • Remove the saucepan from the stove, cover and leave it to sleep overnight.
  • The following day, strain the concentrated mauby into a jug or bottle.
  • Pour one cup of concentrated mauby into another jug or pitcher, add water into the jug (start with 8 cups and adjust, adding more water if needed. At the same time sweeten until you strike a balance in taste that works for you.
