How to Make Bermuda Codfish and Potatoes

Ingredients

Cod Fish & Potatoes

  • 800g Bermuda’s Best Codfish
  • 8 Bananas peeled
  • Potato cut
  • 8 Eggs hard-boiled
  • 2 Avocado

Making the Tomato Sauce

  • Tomato Sauce
  • 1/8 tsp Black Pepper
  • ½ cup chopped onions
  • 1/8 tsp thyme
  • ½ cup zchopped pepper
  • ¼ butter or margarine

Making the Egg Sauce

  • Olive Oil (optional)
  • 1/8 tsp Dry Mustard
  • Sherry (to taste)
  • ¼ lb. Butter/Margarine
  • 2 hard-boiled eggs
  • Worcestershire Sauce (optional)

Instructions

Codfish and potatoes

  • Soak the codfish overnight. When ready to cook, boil the codfish and drain the water twice.
  • When that’s done, add the potatoes into the codfish and allow them to boil. 
  • Serve the codfish and potatoes alongside hardboiled egg, sliced avocados, and bananas.

Tomato sauce

  • Add butter to a pan and allow it to melt. 
  • Add onions and pepper and allow them to simmer
  • Once they are ready, add tomato paste, ketchup, water and salt.
  • Allow the sauce to thicken.

Egg sauce

  • Melt butter in a pan and add chopped boiled eggs, mustard and some salt to taste. Let the ingredients cook properly and serve
  • Serve the Meal
  • Place the Codfish and potatoes, tomato and egg sauce on a plate in an inviting manner. Enjoy.
