The Bahamian-style guava duff is one of the best traditional desserts, made with fresh guava fruit, a sweet dough and a special rum or brandy butter sauce to drizzle on top. The guava fruit reportedly arrived in the country before Christopher Columbus in 1492.

How to Make the Bahamian-Style Guava Duff Recipe
Ingredients
- 12 peeled guavas
- 1 tsp allspice, ground
- 3/4 cup shortening
- 3 tsp baking powder
- 1 tsp of cinnamon
- 1/2 cup of sugar
- 4 cups of flour
- 1 egg, beaten
- 3/4 cup milk
- 1 tsp salt

Rum/Brandy Butter
- 1/4 cup butter
- 1 cup confectioners’ sugar
- 2 tbsp brandy or rum to taste
- 1 tsp boiling water with a dash of salt

Instructions
Making the Guava Duff
- Peel the guavas, cut them in half and remove the seeds.
- Cut the fruits into small pieces and strain the juice, and store it aside for later use.
- In the saucepan, place the fruit, add water and cover.
- Add sugar, cinnamon and allspice to the mixture. Simmer all until the fruit softens.
- To make the dough, combine flour, salt, and baking powder and add in shortening, eggs and milk to create a soft dough. Knead it until it becomes smooth.
- Roll out the dough into jelly-like shape, insert the guava in the centre of the dough, and roll until the dough covers the guava. Seal the edge well.
- Place the dough in a bag, put it in a boiling pot of water to set it.

Making the Rum/Brandy Butter
- Cream butter until it’s soft, but don’t melt it.
- Gradually beat the confectioners’ sugar.
- Add boiling water, rum or brandy and salt.
- Beat them together until it’s smooth.
When serving, cut the guava loaf in half, sprinkle a tablespoon of rum or butter over the top. Soak into the steamed dough.
