How to Make the Bahamian-Style Guava Duff Recipe

Ingredients

  • 12 peeled guavas
  • 1 tsp allspice, ground
  • 3/4 cup shortening
  • 3 tsp baking powder
  • 1 tsp of cinnamon
  • 1/2 cup of sugar
  • 4 cups of flour
  • 1 egg, beaten
  • 3/4 cup milk
  • 1 tsp salt

Rum/Brandy Butter 

  • 1/4 cup butter
  • 1 cup confectioners’ sugar
  • 2 tbsp brandy or rum to taste
  • 1 tsp boiling water with a dash of salt

Instructions

Making the Guava Duff

  1. Peel the guavas, cut them in half and remove the seeds.
  2. Cut the fruits into small pieces and strain the juice, and store it aside for later use.
  3. In the saucepan, place the fruit, add water and cover. 
  4. Add sugar, cinnamon and allspice to the mixture. Simmer all until the fruit softens.
  5. To make the dough, combine flour, salt, and baking powder and add in shortening, eggs and milk to create a soft dough. Knead it until it becomes smooth.
  6. Roll out the dough into jelly-like shape, insert the guava in the centre of the dough, and roll until the dough covers the guava. Seal the edge well.
  7. Place the dough in a bag, put it in a boiling pot of water to set it.

Making the Rum/Brandy Butter

  1. Cream butter until it’s soft, but don’t melt it. 
  2. Gradually beat the confectioners’ sugar.
  3. Add boiling water, rum or brandy and salt.
  4. Beat them together until it’s smooth.

When serving, cut the guava loaf in half, sprinkle a tablespoon of rum or butter over the top. Soak into the steamed dough.
