Tamarind is grown across the Caribbean. It’s a brown-seeded fruit in a long pod with a hard brown shell. When young, the seed is bitter, but as it grows, it becomes sweeter. It’s widely eaten raw and rarely used in cooking. From a health perspective, tamarind has anti-inflammatory and antioxidant properties that help protect against heart disease, cancer, and diabetes. Regarding the juice, it’s extracted from the fruit, takes little time and preparation to make. Here’s a step-by-step guide to make tamarind juice.

How to Make Tamarind Juice

Ingredients

  • Tamarind pods
  • Warm water
  • Sweetener
  • Vanilla 
  • Ginger

Instructions

Making Tamarind Juice Using a Blender

  1. Using your fingers, break the pods and remove the pulp.
  2. Place the pulp in a separate bowl and then add warm water over the raw fruit.
  3. Let the tamarind fruit sit in water for about 10 to 20 minutes.
  4. Transfer the contents of the bowl into a blender that can hold all the liquid and add ginger. Alternatively, you can do this in batches.
  5. Turn on the blender on the lowest setting and let it run for 10 to 15 seconds. 
  6. Increase the speed and let it run for 30 seconds to separate the seeds from the pulp.
  7. After this, the liquid was dark brown, and the seeds would settle at the bottom. If not, continue blending until the seeds are separated.
  8. Strain the tamarind juice through a mesh cloth until all the liquid is extracted. To increase the volume, simply add more water.
  9. Add your preferred sweetener, mix in vanilla extract, and serve over ice.

Making Tamarind Juice Without a Blender

  1. Using your fingers, crack the brown tamarind shells and remove the stalk from the pulp.
  2. In a large bowl, place the taramind with the grated ginger.
  3. Pour hot water over the tamarind fruit, cover with plastic wrap and leave to soften overnight. This will cause the fruit to break down and the seeds to separate.
  4. The next day, strain off the juice in a nut bag or cheesecloth and discard the seeds.
  5. Add the vanilla and sweetener of your choice to taste.

Notes

  • Store the juice in the refrigerator, ready to drink.
  • Drink the juice within 5 days of preparation.
  • If you cannot source fresh pods, use two blocks of tamarind or 1 large jar of organic tamarind paste that’s free of additives. 
  • Tamarind juice has a naturally tart flavor, which you can balance with a sweetener. If you prefer a sour drink, simply skip it.
  • If you want diluted juice, add up to 2 cups of water.
