Rice and beans might sound like a typical dish prepared globally, but different countries have different ways of making it. In Puerto Rican, it’s not the typical white rice and beans. They do it differently. For example, mamposteao mainly focuses on leftover rice. It gives it a delicious outcome, and you can use ingredients you prefer to make it better. Here’s how to make Puerto Rican-style rice and beans.

How to Make the Perfect Mamposteao

Ingredients

  • 3 cups cooked rice
  • 3 Tbsp olive oil
  • 2 tsp kosher salt
  • 12 oz salted pork
  • 2 Tbsp achiote oil 
  • ¼ cup green onion
  • ¼ cup cilantro
  • 3 cups water
  • ½ cup sofrito 
  • 3 cloves garlic
  • 1 Tbsp adobo
  • 2 cups rice
  • 1 pinch pepper
  • 8 oz tomato sauce (Michelle recommends Spanish-style, if available)
  • To Make Fresh Rice (Only If You Don’t Already Have Leftovers)
  • 3 cups pink beans, canned, rinsed and drained
  • 1 pinch salt

Instructions

  1. In a large pot, heat oil over medium-high heat. 
  2. Once the oil is well-heated, add the onions and garlic and stir occasionally until the onions begin to soften. 
  3. Add the tomato sauce, sofrito,  sazón, tomato paste and cook, stirring occasionally, until the onions are lightly brown. 
  4. Stir in the beans and salted pork with their liquid and ½ cup water. 
  5. Add salt and pepper, reduce the heat to medium-low low and cook until the flavors meld.
  6. On low heat, add the rice and cook, stirring continuously, until combined and the flavors meld. Remove from the heat and fold in the cilantro.
  7. You can serve this meal as a side dish, or it can be the main dish with plantain as an accompaniment.
