Haitian tchaka is a thick stew made from pork shoulder or beef stew, black-eyed peas and water broth slowly cooked to a particular level of consistency. To add vibrancy to the meal, vegetables and spices are added and stirred into it. The meal is served as a main entree or a side dish.

How to Cook Haitian Tchaka

Ingredients

  • Chopped Onion
  • Black-eyed Peas
  • Dried Thyme
  • Chopped Green Bell Pepper
  • Chopped Red Bell Pepper
  • Olive Oil
  • Chopped Scallions
  • Black Pepper
  • Hot Pepper
  • Coconut milk
  • Ground Cumin
  • Paprika
  • Water
  • Salt
  • Minced Garlic Cloves
  • Pork shoulder or Beef Stew Meat Cut Into bite-sized Pieces

Instructions

  1. Soak the black-eyed peas overnight. When ready to cook, rinse them properly.
  2. Over medium heat, place your dutch oven on the flame, add oil and once its nicely heated, add the pork or beef in the pan, and cook until it browns. 
  3. Once that’s done, add the onions, scallions, paprika, bell peppers, black pepper, and thyme to the browned beef or pork.
  4. When these ingredients are well-cooked, add coconut milk, hot pepper and water and stir properly. After, pour in the black-eyed peas, stir well and let the mixture boil.
  5. After the mixture boils, reduce the heat and let it simmer for 1 1/2 to 2 hours until the peas soften and the meat is cooked properly.
  6. Serve the Haitian tchaka with rice or cornbread.
