Geera Pork is among the popular Trinidad & Tobago foods that capture the country’s taste. It’s an appetizer that can be served either on the breakfast or dinner table. As a result, it’s accompanied by rice, dhal and sada roti. Also referred to as spicy cumin pork, the dominating flavor is cumin, and is prepared using garlic, bandhania, black pepper and cilantro among others. Here’s a complete guide to cooking Geera pork.

How to Cook Geera Pork

Ingredients 

  • 4 tbs oil
  • 1 large onion
  • 2 tablespoons thyme leaves
  • Hot pepper to taste
  • 2 pounds of pork, preferably pork belly
  • 1/4 cup vinegar
  • 3 tablespoons of roasted cumin ground
  • 3 tablespoons green seasoning
  • 1/4 cup chopped culantro divided
  • 4 tablespoons minced garlic divided
  • Salt and Black pepper to taste

Instructions

  1. If your pork has some hair, place it over an open flame to burn it. Once done, cut the pork into an inch and then put them in a bowl, add vinegar and water and let it sit for 15 minutes to soak. Drain the pork and rinse several times.
  2. Season the pork with spices, including garlic, thyme, green seasoning, 1/2 chopped culantro(reserving the other half), hot pepper, 1/2 onion(reserving the other half), salt and pepper. Marinate overnight or for 30 minutes.
  3. When ready to cook, bring the pork to room temperature. In heated oil, add onions and hot pepper and let them sautee. Once done, add the pork, let it brown for about five minutes. 
  4. After it’s nicely combined, stir and let it soak into its juices. Once the juices evaporate, the pork will continue to cook in its fat. However, add water if the juices evaporate quickly.
  5. Add roasted cumin, hot pepper, chopped cilantro, garlic, and salt according to your preference.
