How to Make Jollof Rice

If you’ve been craving jollof rice or want to learn how to cook it, here’s a step-by-step guide on making jollof rice.

  1. Start by gathering the ingredients: plum tomato, long-grain rice, red bell peppers, scotch bonnet, garlic cloves, ginger, tomato puree, oil, water, salt seasoning and red onions.
  2. On medium flame, heat the oil and sauté the sliced onions. Add the tomato puree and cook it for five minutes.
  3. Add the blended pepper mixture and let it cook for five minutes on medium to high heat.
  4. Add the stock you have, together with all the spices and seasoning you have. Let it cook until the sauce is thick. Ensure it has your preferred consistency.
  5. If you’re satisfied, add rice and mix it in thoroughly. Add water proportionate enough to cook the rice, and let it cook on medium to low heat.
  6. Cover it with a foil and a lid to lock in the moisture. Periodically check to ensure it’s cooking properly.
  7. After about 20 minutes, the jollof rice should be ready.
