The Guyanese chow mein recipe is derived from the Guyanese people of Chinese descent. Chow mein, which is Guyanese fried rice, has borrowed its concepts from these people but has infused their flavors so that it is cooked in their tastes and made local. For example, the inclusion of bora beans and five-spice separates it from many chow mein recipes. Other than that, its ingredients vary depending on what you want to achieve. So here’s how to make proper Guyanese chow mein.

How to Make Guyanese Chow Mein

Ingredients

For Noodles

  • ½ teaspoon black pepper
  • ½ teaspoon salt 
  • water for boiling
  • ½ teaspoon Chinese five-spice powder
  • 2 tablespoons of sesame oil
  • 1 teaspoon garlic powder
  • 12oz package of dried chow mein noodles 
  • 1 tablespoon vegetable oil + 1 teaspoon salt for water

For Chicken (can be seasoned hours before or overnight)

  • A dash of salt
  • 2 tablespoons green seasoning 
  • 1 tablespoon olive oil, to cook the chicken
  • 3 teaspoons reduced-sodium soy sauce
  • 1 tablespoon cassareep or browning sauce
  • 2- 3 lbs cut-up chicken breasts or other desired protein
  • 1 tablespoon olive oil, for marinade

For vegetables 

  • 1-2 stalks bok choy or 1 cup cabbage, cut into strips
  • wiri wiri or scotch bonnet pepper, optional
  • 3 tablespoons reduced-sodium soy sauce 
  • 10-12 Chinese long beans (bora bean)
  • 1 cup pre-shredded or julienned carrots
  • 1 teaspoon freshly grated ginger 
  • 1 tablespoon oyster sauce 
  • 1 tablespoon sesame oil
  • 2 stems scallions, sliced 
  • ½ red bell pepper, cut into strips
  • ¼ cup water

Instructions

  1. Season the chicken with soy sauce, green seasoning, olive oil and salt and then set aside.
  2. Prepare the vegetables, grate the ginger and set them aside.
  3. Boil water with salt and oil. When it’s done, add the chow mein noodles and follow the instructions on the packaging.
  4. Once they are ready, drain the noodles, rinse in cold water and place them in an aluminium pan or a long shallow pan.
  5. Season the noodles with black pepper, garlic powder, sesame oil and set aside.
  6. Saute the chicken for 8 to 10 minutes until the liquid evaporates, and set aside when done.
  7. In a heavy-bottom pot or a wok pan, cook the vegetables by adding water, oil, sesame, grated ginger, oyster sauce and pepper. Let them cook for about 30 seconds. Once done, add the vegetables and let them cook for about 3-4 minutes.
  8. Switch the heat off, add seasoned chow mein noodles to the pot with the vegetables and add the chicken. Add the scallions and mix well. Add salt accordingly.

  • Boil water with salt and oil. When its done, add the chow mein noodles and follow the instructions of the packaging.
  • Once they are ready, drain the noodles, rinse in cold water and place then in an aluminum pan or long shallow pan.
  • Season the noodles with black pepper, garlic powder, sesame oil and set aside.
  • Sautee the chicke for 8 to 10 minutes until the liquid evaporates and set aside when done.
  • On a heavy-bottom pot or a wok pan, cook the vegetables by adding water, oil, sesame, grated ginger oyster sauce and pepper. Let them cook for about 30 seconds. Once done, add the vegetables and let them cook for about 3-4 minutes.
  • Switch the heat off, add seasoned chow mein noodles to pot with vegetables and add the chicken. Add the scallions and mix well. Add salt accordingly.
