Jamaican cuisine is flavorful, colorful, and the turn cornmeal is no exception. This dish can be eaten any time of day and is made with simple ingredients such as coconut milk, cornmeal and seasonings that add flavour.
Start by preparing your coconut milk and cornmeal mixture.
Slice the bacon and fry it to your preferred consistency.
In a medium pot, boil the excess salt from a sailfish
Mix the ingredients: bell pepper, tomatoes, onions, garlic, scallion, scotch bonnet, black pepper, thyme and salt.
In a non-stick, pour in oil and butter, and sautee the vegetables and sailfish.
Add the cocnut milk and lower the temperature to a low boil.
After a few minutes, add the cornmeal mixture and cook it under low heat. Stir it after every five minutes for 30 minutes until the liquid is properly absorbed and the meal is fluffy.
