Pour the chicken feet into a bowl of water and scrub them using lime. Wash them properly and snip their nails with culinary scissors. Rinse them again.
Add water to the level above the chicken feet in an instant pot and bring to a boil under high pressure to make them tender.
Put the culantro, scotch bonnet pepper, and half celery in a blender and add water. Blend the mixture to semi-smooth
Add 3 tablespoons of the blended mixture to the pot and sprinkle some salt to taste
Chop the garlic, celery, peppers, and onions. Slice the cucumber too. Set them aside
The chicken feet souse should be cooked by now. Drain the water, and rinse the chicken feet with water and lime.
In a separate bowl, add enough water and all the ingredients, including the slices of cucumber, onion, celery leaves, and the rest of the blended mixture. Add a tablespoon of lime juice. Also, add a tablespoon of shado beni or culantro.
Season with salt and black pepper.
Deploy the cooked chicken feet into the bowl and mix gently.
Allow all the ingredients to sit and soak for 3 to 4 hours.
Serve the chicken feet souse with bread.
