Ingredients
  

  • 1/4 cup of water
  • 1/4 cup of raisins optional
  • 1/2 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 3/4 cups of fresh grated coconut
  • 1 teaspoon of ground cinnamon
  • 1- 1 1/2 cups of all-purpose flour
  • 1 cup of finely grated sweet potato
  • 3/4 teaspoon of freshly grated nutmeg
  • Banana leaves and kitchen twine/foil for wrapping
  • 2 tablespoons of unsalted butter room temperature

Instructions
 

  • Start by washing the banana leaves and removing the central stems.
  • Cut the banana leaves into 5-inch squares.
  • Boil water in a large pot and then add the leaves. Let them blanch for about 10 seconds until they soften. Remove and run under water to cool.
  • Combine all the remaining ingredients. Mix them to produce a soft dough.
  • Cut ½ cup of dough and place it on each leaf. Fold to make a neat parcel and secure using a kitchen twine or leftover strips of banana leaf. Alternatively, you can wrap the dough using aluminium foil if banana leaves are unavailable.
  • Put the ducuna packets in boiled water and let them simmer for about 45 minutes. Once done, drain and allow them to cool.
  • Serve warm or at room temperature.
