Dukuna (Antigua & Jamaica) recipe is a boiled sweet potato from the Caribbean island of Antigua, made with sweet potato, coconut, and spices, and wrapped in green leaves to reach perfection
Start by washing the banana leaves and removing the central stems.
Cut the banana leaves into 5-inch squares.
Boil water in a large pot and then add the leaves. Let them blanch for about 10 seconds until they soften. Remove and run under water to cool.
Combine all the remaining ingredients. Mix them to produce a soft dough.
Cut ½ cup of dough and place it on each leaf. Fold to make a neat parcel and secure using a kitchen twine or leftover strips of banana leaf. Alternatively, you can wrap the dough using aluminium foil if banana leaves are unavailable.
Put the ducuna packets in boiled water and let them simmer for about 45 minutes. Once done, drain and allow them to cool.
