Poulet Moambe of Dr Congo

Poulet moambe is a national dish of the Central African Republic of the Congo and the Democratic Republic of the Congo. You’ll need chicken, peanut butter, onions, garlic, ginger, hot pepper, palm oil, and spices.

1 tbsp. of salt ½ cup of water 2 Maggi cubes 2 kilos of chicken ½ cup of palm oil 2 ” of ginger minced 2 big onions minced 3 tbsp. of peanut butter 3 cloves of garlic minced 2 tbsp of powdered smoked paprika 2 tbsp. of powdered cayenne pepper 3 tomatoes minced Or, tomato paste
Wash the chicken and set aside
Pour the palm oil into a non-stick cooking pot and brown the chicken
Take the chicken out of the oil
Saute the onion for 3 minutes
Add the garlic and ginger. Add the smoked paprika, cayenne pepper, and Maggi cubes
Add your tomatoes or tomato paste.
Add the chicken, salt to taste and stir
Simmer the poulet moambe for 20 minutes on low heat
Take out the chicken and add the peanut butter, mixing evenly in the sauce
Add a ½ cup of water to the sauce and stir slowly
Add the chicken back to the pot and simmer for 10 minutes on low heat
Serve with any rice, boiled yam, spaghetti, potatoes, or boiled plantains.
