¼ Cup of Oil ½ Cup of Water ½ Tbsp of Salt 1 Tbsp of Cumin 2 Red Bell Peppers 3 Tomatoes Cubed 2 Big Onions cubed 1 Zucchini chopped 1 Cup of Sweat Corn 2 Green Bell Peppers 1 Tbsp of Black Pepper 3 Cloves of Garlic chopped Lima Beans or Green Beans
Using a skillet, heat the oil on medium heat.
Add the cubed onions and sauté for 2 minutes.
Add the tomatoes and stir gently for 5 minutes.
Add the green beans to the sauce.
Cook for 5 minutes, then add the bell peppers.
Sprinkle the cumin on the succotash and the chopped garlic
Add the teaspoon of black pepper.
Add zucchini and salt to taste.
Add half a cup of water and stir.
Allow the succotash to simmer for 5 minutes.
Add the sweet corn and simmer for another two minutes.
Serve hot.
