Delele is a Zambian and Zimbabwean dish prepared with fresh okra, tomatoes, onions, and a protein of your choice. You can add baking soda to the dish to give it a unique taste. Soda, however, reduces the nutritional value of the dish.

Okra 25-30 pieces Two fresh tomatoes sliced ½ tbsp of soda 1 Onion sliced (optional) ½ tbsp of salt to taste 1 cup of water
Wash the okra thoroughly under running water.
Cut off the head or the bottom.
Dice the okra.
Bring the water to a boil in a cooking pot.
Add the soda to the boiling water
Add diced tomatoes
Stir the sauce
Add the okra after a few minutes.
Leave to boil and stir occasionally.
Add salt to taste.
Allow the sauce to boil without covering the pot.
Taste and adjust salt
Serve with Nshima
