Ingredients

  • 2 cups black-eyed beans
  • 2 cups rice
  • Water
  • Sorghum leaves (Waakye leaves) 
  • Salt to taste

Instructions

Here’s a quick and easy Waakye recipe that even busy chefs can whip up in no time.

  1. Start by picking out any stones or grits from the beans and give them a quick wash.
  2. Toss the beans in a pot, cover with water and bring to a boil for about 45 minutes.
  3. By this time the water in the beans would have dried up. Add more water and add salt to taste.
  4. To add some oomph to our Waakye, we add our secret ingredient, the Waakye leaves. Don’t forget to wash them.
  5. Unlock the full potential of your Waakye leaves by adding a touch of baking soda (optional) for an extra pop of color in your dish.
  6. Reduce heat and let it simmer until the beans are tender.
  7. Remove the waakye leaves.
  8. Quickly rinse the rice, and add it to the boiling pot of beans.  Reduce heat and simmer for 15 minutes or until the water is absorbed.
  9. Add salt and vegetable oil to taste, and let it simmer for 5 minutes.
  10. Your homemade Waakye is now ready to serve! Enjoy it with your waakye stew, fried plantains, spaghetti, garri forte, or a salad for a delicious and satisfying meal.
